In recent years, Basque cider cellars have made a huge leap in product diversification. The cider maker families have been working for years to get cider of high quality and variety to adapt to the actual market. Currently, in the online store at www.sagardoa.eus you can find 128 cider or local derivatives.

In our online store, you'll find a filter where these cider and derivatives are classified into the following groups:

Euskal Sagardoa DOP cider

The Euskal Sagardoa Designation of Origin allows 106 varieties of apples in 500 hectares of apple. 248 apple producers from Álava, Gipuzkoa and Bizkaia seek a balance between quality, productivity and different crops.

Euskal Sagardoa is a drink obtained from the fermentation of the natural must of the Basque apple. In fermentation, apple sugar will be converted into alcohol and we'll get low-alcoholic cider, about 5%. They are generally refreshing and perfumed cider, and have a great character in the mouth and spark.

Gastronomic cider

In the group of gastronomic cider, we'll find more complex cider in our mouths. Basque cider is cider made from Basque apple varieties, but all this ciders have some peculiarity. Monovarietal cider is made from a single variety of apples; bivariants are made from two local apple varieties, carefully selected; and we also have ciders aged in oak barrels.

Canned cider

Adapting to the new times, the Basque cider-making families started using the can a few years ago, and more and more cider cellars offer cider in this format. These are cans made specifically for the proper conservation and consumption of cider. Because it's a smaller format than the bottle and has no glass, it's a perfect container for transporting cider.

Sparkling Ciders

The sparkling ciders that we have in our online store are high-end products that are complex to make. These sparkling ciders are made using the Champenoise method, causing a second fermentation in the bottle that usually lasts between 9 and 24 months, depending on the type of sparkling wine you want to make. They are complex ciders in the mouth, with a perfect balance of acidity and bitterness, and a very fine and pleasant bubble on the palate.

Organic cider

Humans are the more and more environmentally concerned, and that's the reason for the organic cider you can find in our online store. It is a high-quality natural cider, made with 100% indigenous Basque apple varieties, which, in addition to complying with all the requirements of the Euskal Sagardoa Designation of Origin, meets all the standards of organic production in Europe, from the apple to the bottle; that is, it has no chemicals.

Apple juices

The apple juice produced by the Basque cider cellars is 100% natural. These juices are made as follows: we collect, clean, crush and press the apple, the must that comes out of the press is pasteurized at a temperature of 85-90°C and bottled. The musts you can find in the online store carry no ingredients other than native apples or added sugars. It's a perfect choice for children or people who don't consume alcoholic beverages.

Cider with hops

Cider with hops is a perfect combination of the freshness of Euskal Sagardoa cider and the subtle bitterness of hops. Cider made from native apple varieties fermented with hops. It's a cider with body, very natural to the palate and with a floral aroma.

Ice cider

Ice cider is obtained from the must formed by pressing carefully selected varieties of native apples: this must is frozen twice, thus obtaining a concentrated must without water, which is allowed to ferment. When the must reaches 9-10 degrees, it leaks and pasteurizes. The result is golden cider, sweet in the mouth and with a great taste of roasted apples, with a long after taste.

Apple vinegars

Last but not least, we have the category of apple cider vinegars. They are natural vinegars made from native apples, and they contain all the qualities and benefits of the apples and the cider. They are the best for salads, fish, and other meals.
